Did You Know? The word iodine is from the Greek iodes, meaning purple or violet. In its gaseous phase, the element iodine takes on a beautiful pink/purple color, although it is grey when in solid form. In nature, the highest concentrations of iodine (as iodide) are found dissolved in seawater, although some minerals and soils also have iodine. Kelp, a type of seaweed, is able to concentrate iodine and provides a dietary source of this otherwise relatively rare element. Iodized salt was commonly available in the United States by 1924 and played an important role in reducing the incidence of goiter, especially in Midwestern states. However, experts feel that iodine consumption in present times has declined as many people now avoid the use of salt in their diets.
